Pride Cake with Royal Icing Rainbow

Zutaten

    blank

    • Your favorite cake recipe (e.g. vanilla or chocolate)

    • Buttercream or ganache for the crumb coat

    • Food coloring of your choice for the outer color

    blank

    • Your favorite cookie dough recipe (e.g. shortcrust pastry or cookie dough)

    blank

    • 200g powdered sugar

    • 1 egg white (or 1.5 tsp meringue powder + 2 tbsp water)

    • 1 tsp lemon juice

    • Colorful food colorings (red, orange, yellow, green, blue, purple)

    blank

    • Sprinkles of your choice (e.g. Spread Love Mix from Happy Sprinkles)

    • Piping bag with star tip

    • Whipping cream with cream stabilizer or SanApart, or white buttercream, for the cloud tuffs

    • Sprinkle Pen for precise placement of the sprinkles

    Und so geht's:

      1. Bake your favorite cake recipe (e.g. chocolate, vanilla, or rainbow cake – how fitting!) and fill the cake as desired. Then coat it evenly with tinted blue buttercream. Into the fridge it goes – it's easier to decorate when chilled!

      1. Prepare your cookie dough and carefully shape it into a large rainbow (you can make a template beforehand). Place on a baking sheet lined with parchment paper and bake golden brown according to the recipe. Let cool completely – otherwise the decoration will melt away later.

      blank

      1. Stir the powdered sugar with the egg white and lemon juice until smooth, until a thick icing forms. Divide into six portions and tint in the colors of the rainbow.

      2. ✏️ Tip: Use an edible food coloring pen to lightly outline the individual arcs on the cookie beforehand – this makes applying the icing especially clean.

      3. Now you can apply each color one after another to your cookie using a piping bag. Tip: outline first…

      4. ...then fill in (the "flooding" technique). Let dry – ideally overnight.

      blank

      1. Grab your favorite sprinkles (e.g. Spread Love Mix) and sprinkle them around the bottom half of the cake – simply press on lightly.

      2. Carefully place the finished rainbow cookie into the cake.

💡 Fixing tip: Use a dollop of royal icing to attach the cookie to the cake as well as to the cake plate – this provides extra hold.

      3. Using a piping bag (star tip), pipe fluffy cloud tuffs: onto the cake, right in front of the cookie arch, and onto the cake plate, where the rainbow "lands."
